White Chili Recipe
This is a recipe we got from Ed’s mom over 40 years ago and just now typed it up. It’s healthy and satisfying and great for parties.
In a large stock pot, combine:
- 1 tbs olive oil
- 5 cloves of garlic, minced
- 1 green bell pepper, cored and diced
- 1 white onion, peeled and chopped
Sautee over medium heat until onion is translucent
Add
- 1 pkg of frozen white sweet corn, thawed
- 12 oz bottle of Mexican beer, warm and flat preferably
- 4 oz can Ortega diced green chilis
- 1 jalapeno, seeded and diced fine
- 1 bunch of flat leaf parsley, rinsed and chopped
- ½ bunch of cilantro. More if you desire
- 3 cans white beans(cannellini), including liquid
- 6 tomatillos, outer husk removed, chopped
- 1 tsp ground cumin, more if desired
- 1 tsp oregano, more if desired.
Simmer long and slow stirring occasionally. Longer is better and best if made a day before
Add the following when serving, if desired:
- *Sautéed chicken breast
- *Jalapeno stuffed olives
- Grated jack cheese
- Sour cream
- *Avocado, cubed
- Green Salsa
- *Crushed tortilla chips

Serve with fresh, hot corn or flour tortillas
