Peppermint Chocolate Energy Bites

These are super easy to make and give you a nice minty chocolate treat that you don’t have to feel guilty about.   I found this recipe from www.paleogrubs.com and  it makes about 8, and I usually double it!

Ingredients

  • ½ cup raw almonds
  • ¾ cup dates, pitted
  • 2 tbsp. unsweetened dark cacao powder   This is the one I love on Amazon
  • 1 tbsp.   almond butter or even peanut butter 
  • 2-3 drops peppermint extract or better yet peppermint essential oil.  (careful don’t overdo it)

Directions 

Place all ingredients in a food processor on high until a dough forms.   Don’t over process it, leave it chunky.  Roll dough into evenly sized balls and enjoy.   You could add unsweetened coconut shreds for a different twist. Store in an airtight container.
